Ingredients
Scale
For the French Toast:
- 4 slices of brioche
- 2 eggs
- 1/3 cup whole milk, half-and-half, or heavy cream
- 1 tsp orange zest (optional)
- 1 tsp vanilla extract
- 1 tsp granulated sugar
- 1/4 tsp ground cinnamon (optional)
- 1/8 tsp ground nutmeg (optional)
For the Coating and Cooking:
- 2-3 cups corn flakes
- Unsalted butter for the pan
For Garnish:
- Maple syrup
- Fresh berries
- Powdered sugar
Instructions
- Prepare the corn flakes: Pour the corn flakes into a large ziplock bag and seal it shut. Using a rolling pin, gently crush the flakes until they are about half their original size, avoiding crushing them into powder. Transfer the crushed flakes into a plate or large shallow bowl to use as a coating.
- Make the egg batter: In a large shallow bowl or container, whisk together the eggs, milk (or cream/half-and-half), orange zest (if using), vanilla extract, sugar, cinnamon, and nutmeg until fully blended. Set aside.
- Prep the pan and coat the bread: Melt about 1/2 tablespoon unsalted butter in a nonstick pan over medium-low heat. Dip one slice of brioche into the egg batter, soaking it well. Then place it on top of the crushed corn flakes and gently press the toast to coat one side thoroughly. Flip the bread and press the other side into the cereal. Use your hands to press additional flakes into any spots that missed coating.
- Cook the French toast: Place the cereal-coated brioche slice in the warm pan. Cook on medium-low to low heat until the bottom turns golden brown, then carefully flip and cook the other side to the same golden crispness. Keep the heat moderate to prevent the cereal from burning, and cook slowly to ensure the toast is cooked through.
- Serve: Remove from the pan and repeat with remaining slices. Serve your crunchy French toast warm, topped with maple syrup, fresh berries, and a dusting of powdered sugar for a delicious breakfast treat.
Notes
- Use medium-low heat and cook slowly to prevent burning the corn flakes coating.
- You can optionally add orange zest, cinnamon, and nutmeg for enhanced flavor.
- Pressing the corn flakes firmly into the soaked bread ensures better adhesion, so the coating stays crunchy.
- Try using brioche or other thick, soft breads for best results.
- Serve immediately to enjoy maximum crunchiness.
