Ingredients
Scale
Spiced Chickpeas
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 teaspoons olive oil
- 3/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
Salad Mix
- 3–4 cups chopped romaine lettuce (1 large head or 2 smaller heads)
- 1/2 cup Caesar dressing
- 1/2 cup freshly shredded or shaved Parmesan cheese
- 1 cup croutons
Wrap Assembly
- 1 ripe avocado, mashed with a fork (optional)
- 2–3 large wraps
Instructions
- Prepare Spiced Chickpeas: Rinse and drain the canned chickpeas thoroughly, then pat them dry with a paper towel to remove excess moisture. Heat the olive oil in a skillet over medium heat. Add the chickpeas along with paprika, garlic powder, onion powder, smoked paprika (if using), and salt. Cook, stirring occasionally, until the chickpeas are golden and crispy, about 5 minutes.
- Make Caesar Salad Mix: In a large bowl, toss the chopped romaine lettuce with the Caesar dressing until evenly coated. Add the shredded Parmesan cheese and croutons, then mix gently to combine all ingredients well.
- Assemble Wraps: Lay out one wrap on a flat surface. Spread the mashed avocado evenly over the wrap if using. Spoon a generous amount of the crispy chickpeas on top, then layer with the Caesar salad mix. Roll the wrap tightly to enclose the fillings. For an optional warm and sealed wrap, you may heat it briefly in a hot pan. Cut each wrap in half and serve immediately.
Notes
- Patting the chickpeas dry before cooking is essential for crispiness.
- You can omit the smoked paprika for a milder flavor or adjust spices to taste.
- The mashed avocado adds creaminess but can be skipped or substituted with hummus for variation.
- Use large flour tortillas or wraps that can hold all fillings without breaking.
- To keep wraps from getting soggy, assemble just before serving.
