  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • juice of 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Prepare the vegetables: Heat the olive oil in a skillet over medium heat and sauté the onion, garlic, and bell peppers until softened, about 5 minutes.
  2. Combine ingredients: Transfer the sautéed mixture to the crockpot. Add the chicken breasts, diced tomatoes, black beans, corn, chicken broth, chipotle peppers, adobo sauce, cumin, smoked paprika, chili powder, oregano, salt, and black pepper.
  3. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender.
  4. Shred chicken: Remove the chicken, shred it, and return it to the soup.
  5. Finish and serve: Stir in lime juice and cilantro before serving. Enjoy with optional toppings like tortilla chips, avocado, sour cream, or cheese.
