- Prepare the Batter: Drain the soaked beans thoroughly to remove excess water. Place them into a blender and blend until you obtain a smooth, creamy paste. Add the chopped onion, cayenne pepper, fresh ginger (or ginger powder), and crayfish if using, blending to incorporate all flavors evenly.
- Season and Whisk: Transfer the blended mixture into a large bowl. Add salt to taste, then whisk vigorously for about 5 minutes. This aerates the batter, helping the fritters become fluffy and light.
- Heat the Oil: Pour the peanut oil into a frying pan and heat it over medium heat until it reaches a hot temperature suitable for frying (about 350°F or until a small drop of batter sizzles when added).
- Fry the Fritters: Using a tablespoon, scoop portions of the batter and carefully drop them into the hot oil. Fry each side for 2-3 minutes or until golden brown and crispy on the outside.
- Drain Excess Oil: Using a slotted spoon, remove the cooked akara from the oil and place them on paper towels to drain any excess oil, ensuring they stay crispy.
