Soup:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) artichoke hearts, drained and chopped
- 4 cups fresh spinach, roughly chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 4 oz cream cheese, cubed
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil and butter: In a large pot over medium heat, add olive oil and butter. Sauté diced onion until soft, about 4-5 minutes. Add garlic and cook for 1 more minute.
- Add vegetables: Stir in artichoke hearts and spinach, cooking until spinach wilts, approximately 2-3 minutes. Season with red pepper flakes if desired.
- Simmer: Pour in broth and bring to a simmer. Add cream cheese, stirring until melted. Reduce heat and mix in heavy cream and Parmesan cheese. Simmer for 5-10 minutes until slightly thickened.
- Season and serve: Season with salt and pepper. Serve hot, garnished with additional Parmesan or cream if desired.
Notes
- For a thicker consistency, blend half the soup before adding cream. Add chicken or white beans for protein. Substitute frozen spinach if fresh is unavailable.
