Description

This creamy lobster curry pasta combines succulent lobster meat with a rich coconut curry sauce, tossed with perfectly cooked fettuccine for a luxurious and flavorful dish that’s sure to impress.

Ingredients

Scale

Seafood

  • 1 lb fresh lobster meat (cooked and chopped)

Pasta

  • 12 oz fettuccine pasta

Sauce

  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 tablespoon olive oil
  • Salt (to taste)
  • Black pepper (to taste)
  • 1/4 cup fresh cilantro (chopped, plus extra for garnish)

Instructions

  1. Prepare the lobster: Boil the lobster in salted water for 8-10 minutes until cooked through. Remove, cool slightly, then chop into bite-sized pieces.
  2. Cook the pasta: Bring a large pot of salted water to boil and cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining the pasta.
  3. Sauté aromatics and spices: Heat olive oil in a large skillet over medium heat. Add minced garlic and grated fresh ginger, sautéing for 1-2 minutes until fragrant. Stir in curry powder and cook for an additional minute to toast the spices.
  4. Make the curry sauce: Pour in the coconut milk and bring to a gentle simmer. Allow the sauce to thicken slightly, about 5 minutes, stirring occasionally.
  5. Add lobster and seasonings: Stir in the chopped lobster meat, fresh lime juice, and chili flakes. Season with salt and black pepper to taste, and simmer for another 3-4 minutes to let flavors meld.
  6. Toss pasta with sauce: Add the cooked fettuccine into the skillet with the sauce. Toss well to coat the pasta evenly, adding reserved pasta water as needed to achieve a silky consistency.
  7. Finish and serve: Stir in chopped fresh cilantro. Plate the pasta and garnish with additional cilantro and chili flakes. Serve immediately.

Notes

  • Adjust chili flakes based on your preferred spice level.
  • Using freshly cooked lobster enhances flavor, but cooked lobster meat can be used as a shortcut.
  • Reserve pasta water helps to loosen the sauce and improve its texture.
  • For a dairy-free option, this recipe is already suitable as it uses coconut milk.
  • Serve with a side of crusty bread or a light green salad for a complete meal.
