Instructions
- Prepare the lobster: Boil the lobster in salted water for 8-10 minutes until cooked through. Remove, cool slightly, then chop into bite-sized pieces.
- Cook the pasta: Bring a large pot of salted water to boil and cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining the pasta.
- Sauté aromatics and spices: Heat olive oil in a large skillet over medium heat. Add minced garlic and grated fresh ginger, sautéing for 1-2 minutes until fragrant. Stir in curry powder and cook for an additional minute to toast the spices.
- Make the curry sauce: Pour in the coconut milk and bring to a gentle simmer. Allow the sauce to thicken slightly, about 5 minutes, stirring occasionally.
- Add lobster and seasonings: Stir in the chopped lobster meat, fresh lime juice, and chili flakes. Season with salt and black pepper to taste, and simmer for another 3-4 minutes to let flavors meld.
