Description

This Creamy Chicken Alfredo Lasagna Rolls recipe combines tender lasagna noodles rolled with a savory mixture of shredded chicken, ricotta, mozzarella, and Parmesan cheeses, all smothered in rich Alfredo sauce and baked to bubbly perfection. It’s a delicious, crowd-pleasing twist on traditional lasagna that’s perfect for weeknight dinners or special occasions.

Ingredients

Scale

Lasagna Rolls

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Sauce and Garnish

  • 2 cups Alfredo sauce
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the lasagna rolls.
  2. Cook Noodles: Cook the lasagna noodles according to package instructions until they are al dente. Drain them well and set aside to cool slightly.
  3. Prepare Filling: In a mixing bowl, combine the shredded cooked chicken, ricotta cheese, half of the mozzarella (1/2 cup), half of the Parmesan (1/4 cup), garlic powder, Italian seasoning, and salt and pepper to taste. Mix thoroughly until well combined.
  4. Assemble Rolls: Lay out one cooked lasagna noodle on a flat surface. Spread a generous portion of the chicken and cheese mixture evenly along the length of the noodle. Carefully roll up the noodle from one end to the other and place it seam side down in a baking dish. Repeat this step with the remaining noodles and filling.
  5. Add Sauce and Cheese: Pour the Alfredo sauce over the rolled noodles evenly, making sure all rolls are covered. Sprinkle the remaining mozzarella and Parmesan cheeses evenly over the top.
  6. Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 25 minutes to allow the flavors to meld and the rolls to heat through.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is bubbly and lightly browned.
  8. Garnish and Serve: Remove from the oven, sprinkle freshly chopped parsley on top for color and freshness, and serve warm.

Notes

  • For added flavor, consider using freshly grated cheeses instead of pre-shredded ones.
  • Feel free to substitute cooked rotisserie chicken to save time.
  • Use gluten-free lasagna noodles if gluten sensitivity is a concern.
  • To make ahead, assemble the rolls and refrigerate for up to 24 hours before baking.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven for best texture.
