Description

This Cozy Warm Mushroom Stew is a comforting and flavorful dish featuring a medley of fresh mushrooms simmered in a savory vegetable broth with aromatic thyme. Perfect for a hearty meal on a chilly day, this stew combines tender sautéed mushrooms with mellow onions and garlic for a deeply satisfying vegetarian dish.

Ingredients

Scale

Vegetables and Aromatics

  • 500 grams mixed fresh mushrooms (cremini, shiitake, button), sliced
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced

Liquids and Seasoning

  • 4 cups low-sodium vegetable broth
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • Olive oil for sautéing (about 2 tablespoons)
  • Salt and pepper to taste

Instructions

  1. Sauté Onions: Heat olive oil in a large pot over medium heat. Add diced onions and cook, stirring occasionally, until they become translucent and soft, about 5 minutes.
  2. Cook Garlic: Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  3. Brown Mushrooms: Add the sliced mushrooms along with a pinch of salt. Cook for 8 to 10 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture, becoming tender.
  4. Simmer Stew: Pour in the low-sodium vegetable broth and add the thyme. Bring the mixture to a simmer, then cook uncovered for 25 minutes to develop flavors and reduce slightly.
  5. Season & Serve: Adjust salt and pepper to taste. Optionally, garnish with fresh parsley before serving for added freshness.

Notes

  • You can use any combination of mushrooms you prefer or have on hand for varied textures and flavors.
  • For a thicker stew, you can mash some of the mushrooms with the back of a spoon or add a small amount of cornstarch slurry during simmering.
  • This stew pairs well with crusty bread or over cooked grains like rice or barley.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
