Description

Cowboy Soup is a hearty and flavorful soup that combines ground beef, beans, potatoes, and a variety of spices for a satisfying meal. Perfect for a cozy dinner on a chilly evening!

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced

Soup Base:

  • 2 medium potatoes, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Cook Ground Beef: In a large pot, heat olive oil over medium heat. Add ground beef, cook until browned, breaking it apart, about 5–6 minutes. Drain excess fat if needed.
  2. Add Ingredients: Add onion, garlic, and cook until softened, about 2–3 minutes. Stir in potatoes, diced tomatoes, corn, beans, tomatoes with chilies, and broth.
  3. Season and Simmer: Season with spices. Bring to a boil, then simmer uncovered for 25–30 minutes until potatoes are tender and flavors meld.
  4. Serve: Serve hot with bread.

Notes

  • For a spicier version, add extra diced green chilies or a pinch of cayenne pepper.
  • This soup can be made in a slow cooker—brown the beef first, then cook on low for 6–7 hours or high for 3–4 hours.
