- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
Soup Base:
- 2 medium potatoes, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 4 cups beef broth
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Cook Ground Beef: In a large pot, heat olive oil over medium heat. Add ground beef, cook until browned, breaking it apart, about 5–6 minutes. Drain excess fat if needed.
- Add Ingredients: Add onion, garlic, and cook until softened, about 2–3 minutes. Stir in potatoes, diced tomatoes, corn, beans, tomatoes with chilies, and broth.
- Season and Simmer: Season with spices. Bring to a boil, then simmer uncovered for 25–30 minutes until potatoes are tender and flavors meld.
- Serve: Serve hot with bread.
Notes
- For a spicier version, add extra diced green chilies or a pinch of cayenne pepper.
- This soup can be made in a slow cooker—brown the beef first, then cook on low for 6–7 hours or high for 3–4 hours.
