Description

This Comforting Cowboy Casserole is a hearty, easy-to-make family favorite that comes together in one pan. Combining savory ground beef, black beans, corn, and zesty diced tomatoes with green chilies, topped with melted cheddar cheese and crispy tater tots, it’s a delicious and satisfying meal perfect for any weeknight dinner.

Ingredients

Scale

Meat and Beans

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained

Vegetables & Seasoning

  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning

Dairy & Topping

  • 2 cups shredded cheddar cheese
  • 1 bag (1 lb) tater tots

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Brown Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks.
  3. Add Beans, Corn & Tomatoes: To the skillet with the browned beef, add the drained black beans, drained corn, diced tomatoes with green chilies, and taco seasoning. Stir thoroughly to combine all ingredients.
  4. Heat Mixture: Continue stirring and cooking the mixture over medium heat until everything is heated through and well incorporated.
  5. Transfer to Baking Dish: Pour the beef and vegetable mixture into a baking dish, spreading it evenly across the bottom.
  6. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the mixture.
  7. Top with Tater Tots: Arrange the tater tots in a single layer on top of the cheese, ensuring even coverage.
  8. Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the tater tots are golden brown and crispy.

Notes

  • Drain the beans and corn well to avoid excess moisture making the casserole soggy.
  • If you prefer spicier flavors, add extra diced jalapeños or chili powder with the taco seasoning.
  • For a vegetarian option, substitute ground beef with plant-based meat or extra beans.
  • Let the casserole cool for a few minutes after baking to help it set for easier serving.
