Description

This Cobb Egg Salad combines classic Cobb salad ingredients with a creamy and tangy mayonnaise and Greek yogurt dressing. Perfect for a quick, protein-packed lunch or light dinner, this salad features hard-boiled eggs, crisp bacon, creamy avocado, sharp blue cheese, and fresh cherry tomatoes, all tossed gently to maintain its chunky texture and vibrant presentation.

Ingredients

Scale

Dressing

  • 3 Tbsp. mayonnaise
  • 3 Tbsp. Greek yogurt
  • 2 Tbsp. red wine vinegar
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Salad

  • 8 hard-boiled eggs, cut into eight pieces, plus more for garnish
  • 8 strips bacon, cooked and crumbled, plus more for garnish
  • 1 avocado, thinly sliced
  • 1/2 cup crumbled blue cheese, plus more for garnish
  • 1/2 cup cherry tomatoes, halved, plus more for garnish
  • 2 Tbsp. freshly chopped chives

Instructions

  1. Prepare the Dressing: In a small bowl, thoroughly stir together the mayonnaise, Greek yogurt, and red wine vinegar until smooth. Season the mixture with kosher salt and freshly ground black pepper to taste to create a creamy and tangy dressing base.
  2. Assemble the Salad: In a large serving bowl, gently mix the hard-boiled eggs, crumbled bacon, sliced avocado, crumbled blue cheese, and halved cherry tomatoes. Handle the ingredients carefully to keep the salad chunky and visually appealing without turning it into a paste.
  3. Add the Dressing: Gradually fold the prepared mayonnaise and Greek yogurt dressing into the salad mixture, adding just enough to lightly coat the ingredients. Reserve any extra dressing for serving if desired.
  4. Season and Garnish: Taste the salad and adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped chives and extra toppings such as more eggs, bacon, blue cheese, and cherry tomatoes for an attractive and flavorful presentation.

Notes

  • For the best flavor, use freshly cooked bacon and perfectly hard-boiled eggs cooled before slicing.
  • Adjust the amount of dressing to your preference; some like a lighter coating, while others prefer more creaminess.
  • You can substitute blue cheese with feta or goat cheese if preferred.
  • This salad is best served chilled but can be enjoyed at room temperature.
  • Make sure to store any leftovers in an airtight container in the refrigerator and consume within 2 days.
