Description

A hearty and comforting Classic Lentil Soup made with wholesome lentils, fresh vegetables, and aromatic spices. Perfect for a nutritious and warming meal that is both easy to prepare and packed with flavor.

Ingredients

Scale

Soup Base

  • 1 cup lentils
  • 6 cups vegetable broth

Vegetables

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

Seasonings and Oil

  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse Lentils: Rinse the lentils thoroughly under cold water to remove any debris or dust and set them aside.
  2. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, cooking until they become softened and slightly translucent.
  3. Add Garlic: Stir in the minced garlic and cook for an additional minute to release its aroma without burning it.
  4. Add Lentils and Broth: Mix in the rinsed lentils along with the vegetable broth, cumin, thyme, salt, and pepper.
  5. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30-40 minutes, or until the lentils are tender.
  6. Adjust Seasoning: Taste the soup and adjust salt and pepper according to preference.
  7. Serve: Ladle the soup into bowls and serve hot for a comforting meal.

Notes

  • For a creamier texture, blend a portion of the soup before serving.
  • Use vegetable broth for a vegetarian version or chicken broth for added richness.
  • Add a splash of lemon juice or a sprinkle of fresh parsley to brighten the flavors.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
