- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup or honey
- 2 cloves garlic (minced)
- zest of 1 lemon
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
- 1 tablespoon chopped fresh thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Prepare the salmon: Place the salmon skin-side down on the prepared sheet.

- Rest and serve: Let the salmon rest for 5 minutes. Garnish with pomegranate seeds and herbs before serving.
