Description
This decadent Chocolate Raspberry Tart combines a crisp graham cracker crust with a rich, creamy chocolate filling and fresh raspberries for a delightful balance of flavors. Perfect for dessert, it is easy to prepare and can be made ahead to chill and set, making it an elegant yet simple treat.
Ingredients
Scale
For the crust
- 1¼ cups graham cracker crumbs or crushed chocolate cookies
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling
- 1 cup heavy cream
- 8 ounces semi-sweet or dark chocolate, chopped
- 1 teaspoon vanilla extract
- Pinch of salt
For topping
- 1½ cups fresh raspberries
- Powdered sugar for dusting (optional)
- Chocolate shavings (optional)
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and sugar, then stir in the melted butter until the mixture has the texture of wet sand. Press this mixture firmly into the bottom and up the sides of a 9-inch tart pan to form an even crust layer. Bake it for 8–10 minutes until set and golden, then transfer to a wire rack to cool completely.
- Make the filling: While the crust cools, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour the hot cream over the chopped chocolate placed in a heatproof bowl. Let it sit for 2 minutes to soften the chocolate, then whisk thoroughly until smooth and glossy. Stir in the vanilla extract and a pinch of salt to enhance flavor.
- Assemble the tart: Pour the chocolate filling evenly into the cooled crust and smooth out the top with a spatula. Arrange the fresh raspberries evenly over the chocolate surface for a burst of freshness and color.
- Chill and serve: Place the tart in the refrigerator for at least 2 hours to allow the filling to set firmly. Before serving, optionally dust the tart with powdered sugar or garnish with chocolate shavings for an elegant finish.
Notes
- You can use a store-bought tart shell to save time.
- For a richer taste, try a mix of bittersweet and milk chocolate.
- This tart is best served chilled but can sit at room temperature for up to 2 hours before serving.
