For the Rice Krispies Treats:
- 3 tablespoons unsalted butter
- 1 (10 oz) bag mini marshmallows
- 6 cups Rice Krispies cereal
- 1 cup chopped maraschino cherries (drained and patted dry)
- 1 teaspoon vanilla extract
For the Chocolate Topping:
- 1 1/2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
- Prepare the Rice Krispies Treats: Line a 9×13-inch baking dish with parchment paper and lightly grease it. In a large pot over medium heat, melt the butter. Add the marshmallows and stir constantly until fully melted and smooth. Remove from heat and stir in the vanilla extract and chopped maraschino cherries. Quickly fold in the Rice Krispies cereal until fully coated. Press the mixture evenly into the prepared baking dish using a buttered spatula or wax paper. Let cool completely.
- Make the Chocolate Topping: In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth. Spread the melted chocolate evenly over the top of the cooled treats. Allow the chocolate to set at room temperature or refrigerate briefly.
- Serve: Once firm, cut into squares and enjoy!
Notes
