Filling
- 2 cups shredded cooked chicken
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup salsa
Other
- 12 small corn tortillas
- Vegetable oil for frying
Instructions
- Prepare filling: In a bowl, thoroughly mix the shredded chicken, shredded cheese, diced onion, and salsa until well combined to create the filling.
- Warm tortillas: Heat a skillet over medium heat and warm each corn tortilla briefly until it becomes pliable and easy to roll without cracking.
- Assemble taquitos: Place a spoonful of the chicken mixture on one end of each warmed tortilla and roll it tightly around the filling to secure the shape.
- Heat oil: Pour vegetable oil into a frying pan to cover the bottom by about an inch, and heat it over medium heat until shimmering but not smoking.
- Fry taquitos: Carefully place the rolled tortillas seam-side down into the hot oil and fry them in batches, turning occasionally, until all sides are golden brown and crispy.
- Drain and serve: Remove the taquitos from the oil and place them on paper towels to drain excess oil. Serve hot as a delicious snack or appetizer.
Notes
- Use small corn tortillas for authentic taste and proper size.
- Make sure the tortillas are properly warmed to prevent cracking when rolling.
- Shredded cooked chicken can be leftover rotisserie chicken or freshly cooked.
- Adjust the frying oil temperature to avoid burning or soggy taquitos.
- Serve with guacamole, sour cream, or extra salsa for dipping.
- To reduce oil absorption, avoid overcrowding the pan while frying.
