Description

This Chicken Taco Pizza recipe combines the bold flavors of seasoned chicken, refried beans, and a blend of cheeses on a crispy pizza crust. Topped with fresh tomatoes, olives, and green onions, it’s an easy and delicious weeknight dinner that brings a fun Tex-Mex twist to traditional pizza night.

Ingredients

Scale

For the Chicken Taco Mixture

  • 1/2 pound boneless skinless chicken breasts, cubed
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup ranch dressing

For the Pizza Base

  • 1 recipe homemade pizza dough OR 1 large store-bought flatbread pizza crust
  • 1 can (16 ounces) refried beans

Toppings

  • 2 to 3 cups shredded cheddar cheese (Colby and Monterey Jack cheese blend recommended)
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives
  • 4 green onions, chopped

Instructions

  1. Prepare the pizza dough: Follow your homemade pizza dough recipe instructions or unwrap the store-bought flatbread crust. Let homemade dough rest covered for at least 10 minutes. Then press the dough evenly onto a large pizza pan or place the flatbread on a pizza stone or large pizza pan.
  2. Preheat the oven: Set your oven to 450°F (232°C) to ensure it’s hot and ready for baking the pizza.
  3. Cook the chicken: Heat a large non-stick skillet over medium-high heat. Add the cubed chicken breasts and cook, stirring occasionally, until no longer pink inside, about 10 minutes. Stir in the taco seasoning mix and ranch dressing directly into the skillet (no added water needed). Continue cooking, stirring frequently, for another 5 to 8 minutes until the chicken is well-coated and sauce has thickened. Remove skillet from heat and let the chicken mixture rest.
  4. Prepare the refried beans: Transfer the refried beans to a microwavable-safe bowl. Microwave on high for 1 minute, then stir well to loosen. Spread the warmed beans evenly over the prepared pizza crust as the sauce base.
  5. Assemble the pizza: Layer the cooked chicken mixture evenly over the refried beans. Sprinkle the shredded cheese over the chicken, then top with chopped tomatoes, sliced black olives, and chopped green onions.
  6. Bake the pizza: Place the assembled pizza in the preheated oven and bake for 12 to 15 minutes, or until the cheese is fully melted and bubbly. Carefully remove the hot pizza from the oven.
  7. Rest and serve: Allow the pizza to rest for 5 minutes before slicing to let the toppings set. Serve warm and enjoy your flavorful Chicken Taco Pizza!
  8. Storage: Store any leftover pizza in an airtight container in the refrigerator for up to 2 days.

Notes

  • If using store-bought flatbread crust, no dough preparation is needed; simply spread the toppings on it and bake.
  • You can customize the cheese blend according to your preference—Colby, Monterey Jack, or cheddar all work well.
  • Leftover pizza is best reheated in an oven or toaster oven to maintain crispiness.
  • Adjust the amount of taco seasoning based on your spice preference.
  • Adding fresh cilantro or a squeeze of lime after baking can enhance the taco flavors.
