Ingredients
Scale
Pasta and Chicken
- 12 oz spaghetti
- 1 lb boneless skinless chicken breasts, cut into strips
- 1 teaspoon salt
- ½ teaspoon black pepper
Sauce and Toppings
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- ½ teaspoon red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- ½ cup reserved pasta water
- 8 oz burrata cheese (2 small balls or torn into pieces)
- 2 tablespoons chopped fresh basil or parsley
Instructions
- Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain the spaghetti and set aside.
- Prepare the Chicken: While the pasta cooks, season the chicken strips with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sauté for 6–7 minutes until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
- Make the Lemon Butter Garlic Sauce: Reduce the heat to medium and add butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Stir in the lemon zest, lemon juice, and red pepper flakes if using.
- Toss Pasta with Sauce: Add the cooked spaghetti to the skillet along with the reserved pasta water and grated Parmesan cheese. Toss everything together thoroughly to evenly coat the pasta with the sauce.
- Combine Chicken and Pasta: Return the cooked chicken to the skillet and gently mix to combine with the pasta and sauce.
- Add Burrata and Herbs: Just before serving, top the pasta and chicken with torn pieces of burrata cheese and sprinkle with chopped fresh basil or parsley for a fresh finish.
- Serve: Serve the dish warm, optionally accompanied by a fresh arugula salad or garlic bread.
Notes
- Add burrata just before serving to maintain its creamy texture.
- For extra flavor, add a splash of white wine to the sauce while cooking the garlic and butter.
- To add crunch and interest, sprinkle toasted pine nuts on top.
- This dish pairs wonderfully with a side arugula salad or warm garlic bread.
