Description

This Chicken Fajita Bowl recipe is a delicious and wholesome meal that combines tender chicken strips with colorful bell peppers, onions, and flavorful seasonings, served over rice and topped with your favorite Mexican-inspired toppings.

For the Chicken:

  • 1 pound boneless, skinless chicken breasts (sliced into strips)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

For the Bowl:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small red onion (sliced)
  • 2 cups cooked rice or cauliflower rice
  • 1/2 cup salsa or pico de gallo
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1 avocado (sliced)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Prepare the Chicken: In a bowl, combine chicken strips with 1 tablespoon olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat.
  2. Cook the Chicken: Heat remaining olive oil in a skillet over medium-high heat. Cook chicken for 6–8 minutes until browned and cooked through. Set aside.
  3. Sauté Peppers and Onions: In the same skillet, sauté bell peppers and onion for 5–7 minutes until tender and slightly charred.
  4. Assemble the Bowls: Divide rice among 4 bowls. Top with chicken, sautéed peppers and onions, salsa, cheese, avocado, and cilantro. Serve with lime wedges.
