Muffin Batter:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder

- 2/3 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups pitted cherries (fresh or frozen)
- 2 tablespoons flour (for coating cherries)
Cobbler Topping:
- 1/3 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons cold butter (cubed)
Instructions
- Preheat the oven and prepare the muffin tin: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
- Prepare the muffin batter: In a large bowl, whisk together the dry ingredients. In a separate bowl, whisk the wet ingredients, then combine everything. Coat cherries in flour and fold them in. Fill muffin cups.
- Make the cobbler topping: Mix topping ingredients, cut in butter until crumbly, and sprinkle over batter.
- Bake and cool: Bake for 18-22 minutes. Cool in the pan before transferring to a wire rack.
Notes
- Frozen cherries can be used, but thaw and drain them first.
- Add chopped pecans or almonds for extra crunch.
- Muffins are best enjoyed fresh but can be stored for up to 3 days.
