Description

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder

  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pitted cherries (fresh or frozen)
  • 2 tablespoons flour (for coating cherries)

Cobbler Topping:

  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold butter (cubed)

Instructions

  1. Preheat the oven and prepare the muffin tin: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the muffin batter: In a large bowl, whisk together the dry ingredients. In a separate bowl, whisk the wet ingredients, then combine everything. Coat cherries in flour and fold them in. Fill muffin cups.
  3. Make the cobbler topping: Mix topping ingredients, cut in butter until crumbly, and sprinkle over batter.
  4. Bake and cool: Bake for 18-22 minutes. Cool in the pan before transferring to a wire rack.

Notes

  • Frozen cherries can be used, but thaw and drain them first.
