Chicken:

- 1 packet ranch seasoning mix (about 1 ounce)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Prepare the chicken: In a large bowl, toss the chicken pieces with olive oil and ranch seasoning until evenly coated.
- Make the coating: In a separate bowl, combine the cheddar cheese, Parmesan cheese, panko breadcrumbs, garlic powder, and black pepper.
- Coat the chicken: Dredge each piece of chicken in the cheese and breadcrumb mixture, pressing lightly to help it stick.
- Bake: Arrange the coated chicken bites on the prepared baking sheet, spray with cooking spray or drizzle with olive oil, and bake for 18–20 minutes, flipping halfway through.
- Serve: Once cooked through and crispy, serve warm.
