Description

This Cheesy Loaded Beef Meatloaf Casserole combines the classic comfort of savory ground beef meatloaf with creamy mashed potatoes, melted cheddar cheese, and crispy bacon. Baked to perfection in one casserole dish, it creates a hearty, delicious meal that’s perfect for weeknight dinners or family gatherings.

Ingredients

Scale

Meatloaf Layer

  • 1 lb (450g) ground beef
  • 1/2 cup (60g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 1 egg
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Mashed Potato Layer

  • 2 cups (450g) mashed potatoes (homemade or store-bought)
  • 1/4 cup (60ml) sour cream or cream cheese (optional)
  • 1/4 cup (60ml) milk (if needed to loosen the potatoes)

Topping

  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (60g) cooked and crumbled bacon
  • 2 tbsp chopped green onions or parsley (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a medium casserole dish to prevent sticking.
  2. Prepare the Meatloaf Layer: In a large bowl, mix together the ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper until well combined. Press this mixture evenly into the bottom of the prepared casserole dish.
  3. Bake the Meatloaf Base: Place the casserole dish in the preheated oven and bake the meatloaf base for 20 minutes to partially cook it before adding the toppings.
  4. Prepare Mashed Potatoes: In a separate bowl, combine the mashed potatoes with sour cream or cream cheese to enhance creaminess. Add milk if needed to achieve a smooth, spreadable consistency.
  5. Assemble the Casserole: After the 20 minutes of baking, remove the casserole dish from the oven. Spread the creamy mashed potatoes evenly over the partially cooked meatloaf layer. Then sprinkle the shredded cheddar cheese and crumbled bacon over the top.
  6. Bake the Casserole: Return the assembled casserole to the oven and bake for another 15-20 minutes, or until the cheese is melted, bubbly, and golden brown.
  7. Garnish and Serve: Allow the casserole to cool for 5 minutes. Garnish with chopped green onions or parsley if desired, then slice and serve hot for a satisfying meal.

Notes

  • For extra flavor, you can add herbs like thyme or oregano to the meatloaf mixture.
  • If you prefer a spicier kick, a pinch of smoked paprika or chili powder can be added.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • Make sure not to overbake to keep the meatloaf moist and tender.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
