- 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
- 1 cup shredded cheddar cheese
- 2 green onions, finely sliced
- 2 tablespoons chopped fresh parsley

- 2 tablespoons olive oil or vegetable oil

- Prepare Dry Mixture: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Stir well to evenly distribute the leavening and seasoning.
- Prepare Wet Mixture: In a separate bowl, whisk together the eggs and milk until smooth. Add the corn kernels, shredded cheddar cheese, sliced green onions, and chopped parsley. Stir gently to combine all the wet ingredients evenly.
- Make Batter: Pour the wet ingredient mixture into the bowl containing the dry ingredients. Stir carefully until a thick batter forms without overmixing; the batter should hold together but not be too runny.
- Heat Oil: Heat the olive or vegetable oil in a large skillet over medium heat. Ensure the oil is hot but not smoking to get a crispy exterior.
- Cook Fritters: Using a spoon, scoop about 2 tablespoons of batter per fritter into the skillet. Gently flatten each mound slightly with the back of the spoon to form small patties. Cook for 3 to 4 minutes on each side or until the fritters are golden brown and crispy on the outside.
