Ingredients
Scale
Filling
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (such as cheddar or Mexican blend)
- 1/2 cup cream cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
Taquitos
- 10 small flour tortillas
- Oil for frying (such as vegetable or canola oil)
Instructions
- Prepare the filling: In a mixing bowl, combine the cooked shredded chicken, shredded cheese, cream cheese, garlic powder, onion powder, and cumin. Mix thoroughly until all ingredients form a consistent filling.
- Warm the tortillas: Heat the flour tortillas in a dry pan over medium heat for about 20-30 seconds per side, or until they become soft and pliable to prevent cracking during rolling.
- Fill the tortillas: Spoon a small amount of the chicken and cheese filling onto each warmed tortilla, spreading it evenly but leaving space at the edges for rolling.
- Roll the taquitos: Tightly roll each tortilla around the filling, making sure the seam is sealed to hold the filling during frying.
- Heat the oil: Pour enough oil into a pan to cover the bottom by about 1/2 inch and heat over medium heat until shimmering and hot but not smoking, approximately 350°F (175°C).
- Fry the taquitos: Carefully place the rolled taquitos seam side down into the hot oil. Fry them in batches, turning occasionally, until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
- Drain and serve: Remove the taquitos from the oil and place them on paper towels to drain excess oil. Serve hot with your choice of salsa, sour cream, or guacamole.
Notes
- For a crispier texture, use corn tortillas instead of flour tortillas, but be sure to warm them well to prevent cracking.
- You can substitute cooked rotisserie chicken for convenience.
- To make these healthier, bake the taquitos in a preheated oven at 425°F (220°C) for 15-20 minutes, flipping halfway through.
- Use gloves or be cautious when frying to avoid hot oil splatters.
- Store any leftovers in an airtight container in the refrigerator and reheat in an oven or air fryer for best texture.
