Ingredients
Scale
Pie Crust
- 1 pie crust (store-bought or homemade)
Filling
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the quiche.
- Prepare Pie Crust: If using a store-bought pie crust, fit it neatly into a 9-inch pie dish, then prick the bottom of the crust with a fork to prevent bubbling during baking.
- Pre-Bake Crust: Bake the crust in the preheated oven for 10 minutes to partially cook it, then remove and set aside.
- Caramelize Onions: Heat olive oil in a large skillet over medium heat. Add the thinly sliced onions, sugar, and salt. Cook, stirring occasionally, for 20-25 minutes until the onions turn golden brown and are fully caramelized.
- Cool Onions: Remove the skillet from heat and allow the caramelized onions to cool slightly before mixing with other ingredients.
- Mix Egg Custard: In a mixing bowl, whisk together the eggs, heavy cream, black pepper, and nutmeg until smooth and well combined.
- Add Spinach and Feta: Stir the chopped fresh spinach and crumbled feta cheese into the egg mixture evenly.
- Combine Onions with Custard: Fold the cooled caramelized onions into the egg, spinach, and feta mixture, ensuring everything is well mixed.
- Fill Pie Crust: Pour the prepared filling into the pre-baked pie crust, spreading it evenly.
- Add Mozzarella (Optional): If using, sprinkle the shredded mozzarella cheese evenly on top of the filling for added flavor and browning.
- Bake Quiche: Place the filled pie dish in the oven and bake for 30-35 minutes, or until the quiche is set in the center and lightly golden on top.
- Cool and Serve: Remove the quiche from the oven and allow it to cool for about 10 minutes before slicing. Serve warm or at room temperature for best flavor.
Notes
- For the best results, use fresh spinach and good quality feta cheese.
- You can prepare the caramelized onions a day ahead and refrigerate to save time.
- If you want a dairy-free version, substitute heavy cream with coconut cream and omit the cheeses.
- Ensure the pie crust is not overbaked during pre-baking to avoid dryness.
- Leftovers can be refrigerated and reheated in the oven for a freshly baked taste.
