Perfect for entertaining or as a light snack, these bites are bursting with fresh ingredients and drizzled with a sweet and tangy balsamic reduction.
Ingredients
Scale
For the Balsamic Reduction:
- 1 pint cherry tomatoes
- 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
- 1 bunch fresh basil leaves
- ½ cup balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper to taste
- Toothpicks or small skewers for assembly
Instructions
- Prepare the Balsamic Reduction: In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a gentle simmer and cook for 8–10 minutes, stirring occasionally, until the mixture reduces by half and becomes thick and syrupy. Remove from heat and let cool.
- Assemble the Salad Bites: While the reduction is cooling, assemble the bites by threading one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto a toothpick or small skewer. Arrange the assembled bites on a serving platter.
- Final Touches: Drizzle with olive oil, sprinkle with salt and pepper, and lightly drizzle the balsamic reduction over the top just before serving.
Notes
- You can make the balsamic reduction ahead of time and store it in the refrigerator for up to a week.
- For extra flavor, marinate the mozzarella balls in olive oil and herbs before assembling.
