Ingredients
Scale
Mix
- 6 cups Rice Krispies cereal
- 4 tablespoons unsalted butter
- 10 ounces mini marshmallows (about 1 bag)
- 1/2 cup dry vanilla cake mix (heat treated)
- 1/2 teaspoon vanilla extract
- 1/3 cup rainbow sprinkles plus extra for topping
- Nonstick cooking spray
Instructions
- Prepare Pan: Lightly grease a 9×13 inch baking pan with nonstick cooking spray and set aside to prevent sticking.
- Melt Butter and Marshmallows: In a large pot over low heat, melt the unsalted butter. Add the mini marshmallows and stir constantly until they are completely melted and the mixture is smooth.
- Add Cake Mix and Vanilla: Remove the pot from heat and stir in the heat treated dry vanilla cake mix and vanilla extract until fully combined to create the cake batter flavor.
- Combine with Cereal and Sprinkles: Gently fold in the Rice Krispies cereal until it is evenly coated with the marshmallow mixture. Stir in the rainbow sprinkles for a colorful, festive touch.
- Press into Pan: Transfer the mixture into the prepared baking pan. Use a spatula or lightly greased hands to gently press the mixture evenly into the pan, ensuring not to compress too firmly to maintain softness.
- Add Topping Sprinkles: Sprinkle additional rainbow sprinkles on top and press them lightly into the surface for decoration.
- Cool and Set: Allow the treats to cool and set for about 30 minutes at room temperature before cutting into 16 squares and serving.
Notes
- Heat treat the dry cake mix by spreading it evenly on a baking sheet and baking at 350°F for 5 minutes to ensure it is safe to eat.
- Do not press the mixture too firmly into the pan or the treats may become dense instead of soft and chewy.
