Mushrooms:
- 20 large white or cremini mushrooms, stems removed and finely chopped
Shrimp Filling:

- 1/2 pound raw shrimp, peeled, deveined, and finely chopped
- 2 cloves garlic, minced
- 1/4 cup finely chopped red bell pepper
- 1/4 cup chopped green onions
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
Cheese Mixture:
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: to 375°F. Clean the mushroom caps and place them cavity-side up on a baking sheet lined with parchment paper.
- Prepare the filling: Heat olive oil in a skillet, sauté mushroom stems, garlic, red bell pepper, and green onions. Add shrimp, Cajun seasoning, paprika, salt, and pepper. Cook until shrimp is opaque. Let cool.
- Make the shrimp mixture: Combine shrimp mixture with cream cheese, half of the mozzarella, and Parmesan. Spoon into mushroom caps.
- Bake: Top with remaining mozzarella. Bake for 15–18 minutes until mushrooms are tender and cheese is melted. Broil for a golden cheese pull. Garnish with parsley.
