Mushrooms:

  • 20 large white or cremini mushrooms, stems removed and finely chopped

Shrimp Filling:

  • 1/2 pound raw shrimp, peeled, deveined, and finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste

Cheese Mixture:

  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven: to 375°F. Clean the mushroom caps and place them cavity-side up on a baking sheet lined with parchment paper.
  2. Prepare the filling: Heat olive oil in a skillet, sauté mushroom stems, garlic, red bell pepper, and green onions. Add shrimp, Cajun seasoning, paprika, salt, and pepper. Cook until shrimp is opaque. Let cool.
  3. Make the shrimp mixture: Combine shrimp mixture with cream cheese, half of the mozzarella, and Parmesan. Spoon into mushroom caps.
  4. Bake: Top with remaining mozzarella. Bake for 15–18 minutes until mushrooms are tender and cheese is melted. Broil for a golden cheese pull. Garnish with parsley.
