Sweet Potatoes:
- 2 large sweet potatoes, peeled and diced
- 3 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Chicken:
- 1 pound boneless skinless chicken breasts
- 1 tablespoon Cajun seasoning
Additional Ingredients:
- 2 cups cooked brown rice or quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Roast Sweet Potatoes: Toss the diced sweet potatoes with 2 tablespoons olive oil, smoked paprika, garlic powder, salt, and black pepper. Roast for 25–30 minutes, flipping halfway, until tender and golden.
- Cook Chicken: Rub the chicken breasts with Cajun seasoning. Cook in a skillet over medium-high heat for 6–8 minutes per side. Let rest for 5 minutes, then slice thinly.
- Assemble Bowls: Divide rice or quinoa among four bowls. Top with roasted sweet potatoes, sliced chicken, black beans, corn, avocado, and cilantro. Squeeze lime juice over the top before serving.
