Sweet Potatoes:

  • 2 large sweet potatoes, peeled and diced
  • 3 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken:

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon Cajun seasoning

Additional Ingredients:

  • 2 cups cooked brown rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Roast Sweet Potatoes: Toss the diced sweet potatoes with 2 tablespoons olive oil, smoked paprika, garlic powder, salt, and black pepper. Roast for 25–30 minutes, flipping halfway, until tender and golden.
  3. Cook Chicken: Rub the chicken breasts with Cajun seasoning. Cook in a skillet over medium-high heat for 6–8 minutes per side. Let rest for 5 minutes, then slice thinly.
  4. Assemble Bowls: Divide rice or quinoa among four bowls. Top with roasted sweet potatoes, sliced chicken, black beans, corn, avocado, and cilantro. Squeeze lime juice over the top before serving.
