Description

Buttered Corn Rice is a simple and flavorful side dish featuring tender long grain white rice cooked with sweet corn kernels, garlic, and butter. This comforting recipe uses chicken broth or water for cooking, enhanced with aromatic spices, and finished with fresh parsley for a hint of freshness. It’s perfect for quick weeknight meals or as an accompaniment to a variety of main dishes.

Ingredients

Scale

Rice and Broth

  • 1 cup long grain white rice
  • 2 cups chicken broth or water

Vegetables and Flavorings

  • 1 cup sweet corn kernels, fresh, frozen, or canned and drained
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder

Butter and Garnish

  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch, ensuring fluffy cooked rice.
  2. Sauté Garlic and Rice: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the rice, coating it in butter, and cook for 1 to 2 minutes to toast slightly.
  3. Add Liquids and Spices: Pour in the chicken broth or water. Add salt, black pepper, and onion powder. Stir briefly and bring the mixture to a boil.
  4. Simmer the Rice: Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes without lifting the lid to allow the rice to absorb the liquid.
  5. Cook with Corn: Stir in the sweet corn kernels, cover again, and cook for an additional 5 minutes until the rice is tender and the corn is heated through.
  6. Rest and Fluff: Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the rice gently with a fork to separate the grains.
  7. Finish with Butter and Parsley: Stir in the remaining 1 tablespoon of butter until melted and mixed well. Garnish with chopped fresh parsley if desired and serve warm.

Notes

  • For a whole grain option, substitute brown rice and increase cooking time accordingly.
  • For extra richness, replace part of the cooking liquid with milk or add grated Parmesan cheese before serving.
