  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Soup Base:

  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 can (15 oz) tomato sauce
  • Add-Ins:

  • 1 cup frozen mixed vegetables
  • 1 cup elbow macaroni or small pasta
  • Seasonings:

  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Brown the Beef: In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain excess fat if needed.
  2. Sauté Aromatics: Add the chopped onion and garlic, sauté for 2–3 minutes until softened.
  3. Add Broth and Tomatoes: Stir in the beef broth, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Simmer Soup: Add frozen vegetables and uncooked pasta, then reduce heat to simmer. Cook for 10–12 minutes until pasta is tender. Stir occasionally.
  5. Adjust and Serve: Taste and adjust seasoning if needed. Serve hot.
