Description

These Brownie Mix Cookies are quick and easy to make, combining the rich, fudgy flavor of brownie mix with the classic texture of cookies. With just a few ingredients and minimal prep, you get soft, chewy cookies loaded with chocolate chips that are perfect for any chocolate lover.

Ingredients

Scale

Cookie Dough

  • 18.3 oz box Fudge Brownie Mix
  • ½ cup vegetable oil
  • 2 large eggs

Mix-ins

  • 1 cup chocolate chips (preferably dark chocolate)
  • Optional: extra chocolate chips for topping

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Ingredients: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir together until a soft dough forms with a uniform consistency.
  3. Add Chocolate Chips: Gently fold in the chocolate chips, distributing them evenly throughout the dough.
  4. Form Cookies: Use a cookie scoop to drop approximately 1-1/2-inch thick balls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  5. Optional Topping: For extra richness, you can add a few additional chocolate chips on top of each dough ball before baking.
  6. Bake: Bake in the preheated oven for 10 minutes. Check to see if the cookies are set; if they need more time, bake for an additional 1-2 minutes until just set but still soft.
  7. Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 10 minutes. Then transfer them to a cooling rack to cool completely.

Notes

  • Do not overbake to maintain a chewy texture.
  • Use parchment paper or a silicone mat to avoid sticking and facilitate easy cleanup.
  • These cookies can be stored in an airtight container for up to 3 days.
  • For a different flavor, try mixing in nuts or white chocolate chips instead.
