Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
- Rinse Quinoa: Thoroughly rinse 1 cup of quinoa under cold water to remove its natural bitterness.
- Cook Quinoa: In a pot, combine the rinsed quinoa with 1 cup of vegetable broth and bring to a boil.
- Simmer Quinoa: Reduce the heat to low and simmer the quinoa for about 15 minutes or until the liquid is absorbed and quinoa is tender.
- Sauté Onions: While quinoa cooks, heat 2 tablespoons of olive oil in a skillet over medium heat, then add 1/2 cup diced onions and sauté until tender and translucent.
- Cook Broccoli & Season: Add 2 cups broccoli florets to the skillet along with 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 5 minutes until broccoli is slightly tender but still crisp.
- Combine Mixtures: In a large bowl, mix the cooked quinoa, broccoli and onion mixture, and half of the shredded cheese until well combined.
- Prepare Casserole: Transfer the mixture into a baking dish, spreading it evenly, then top with the remaining cheese.
- Bake: Bake in the preheated oven for 20 minutes or until the cheese on top is melted, golden, and bubbly.

- You can substitute vegetable broth with chicken broth if not vegetarian.
