Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
  2. Rinse Quinoa: Thoroughly rinse 1 cup of quinoa under cold water to remove its natural bitterness.
  3. Cook Quinoa: In a pot, combine the rinsed quinoa with 1 cup of vegetable broth and bring to a boil.
  4. Simmer Quinoa: Reduce the heat to low and simmer the quinoa for about 15 minutes or until the liquid is absorbed and quinoa is tender.
  5. Sauté Onions: While quinoa cooks, heat 2 tablespoons of olive oil in a skillet over medium heat, then add 1/2 cup diced onions and sauté until tender and translucent.
  6. Cook Broccoli & Season: Add 2 cups broccoli florets to the skillet along with 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 5 minutes until broccoli is slightly tender but still crisp.
