Ingredients
Puff Pastry:
1 sheet puff pastry, thawed
Egg Mixture:
4 large eggs; 1/4 cup milk; 1/4 teaspoon salt; 1/8 teaspoon black pepper
Filling:
1/2 cup cooked breakfast sausage, crumbled; 1/2 cup shredded cheddar cheese; 1/4 cup diced bell pepper; 2 tablespoons finely chopped green onions

1 egg
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prepare egg mixture: Whisk together eggs, milk, salt, and pepper. Scramble in a skillet until just set. Remove from heat and stir in sausage, cheese, bell pepper, and green onions.
- Prepare puff pastry: Roll puff pastry into a 10×12-inch rectangle. Cut in half lengthwise. Spoon egg mixture onto one strip, leaving a border. Top with the second strip, seal edges, brush with egg wash.
- Bake: Score the top, cut into bars, and bake for 18–22 minutes until golden.
