Filling:

  • 1/2 lb breakfast sausage or turkey sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 cup cooked hash browns or diced potatoes

Wrapping:

  • 6 large flour tortillas

Instructions

  1. Prepare Egg Mixture: Whisk eggs with milk, salt, and pepper.
  2. Cook Filling: Sauté onions and bell peppers. Add sausage and hash browns, then pour in the egg mixture. Cook until eggs are done.
  3. Assemble Burritos: Sprinkle cheddar over the filling, divide among tortillas, roll them up tightly.
  4. Storage: Wrap burritos in foil or parchment and refrigerate or freeze.
