- 8 large eggs

Filling:
- 1 tbsp olive oil
- 1/2 lb breakfast sausage or turkey sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup cooked hash browns or diced potatoes
Wrapping:
- 6 large flour tortillas
Instructions
- Prepare Egg Mixture: Whisk eggs with milk, salt, and pepper.
- Cook Filling: Sauté onions and bell peppers. Add sausage and hash browns, then pour in the egg mixture. Cook until eggs are done.
- Assemble Burritos: Sprinkle cheddar over the filling, divide among tortillas, roll them up tightly.
- Storage: Wrap burritos in foil or parchment and refrigerate or freeze.
Notes
- To reheat, microwave refrigerated burritos for 1–2 minutes or frozen burritos for 3–4 minutes. Swap sausage for bacon, black beans, or tofu. Add salsa or hot sauce if desired.
