Description

Ingredients

Salad:

  • 5 cups fresh baby spinach
  • 2 medium cooked beets, sliced or cubed
  • 1 cup canned or fresh mandarin orange segments (drained if canned)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped candied or toasted walnuts or pecans
  • 2 tablespoons thinly sliced red onion

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon orange juice
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions
