Description

Hearty and comforting Beef & Tomato Macaroni Soup combines ground beef, savory tomato flavors, and tender macaroni in a flavorful broth, perfect for a satisfying family meal in just 40 minutes.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 medium yellow onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, minced

Spices and Seasonings

  • 2 teaspoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Liquids and Soups

  • 2 (10.75-ounce) cans condensed cream of tomato soup
  • 1 (15-ounce) can diced tomatoes, undrained
  • 32 ounces beef broth
  • 4 cups water

Other

  • 2 tablespoons vegetable oil
  • 2 cups uncooked pasta

Instructions

  1. Sauté Vegetables: Heat 2 tablespoons vegetable oil in a large pot over medium-high heat. Add the finely chopped onion, green bell pepper, and minced garlic. Cook for 5-6 minutes until the vegetables are softened and fragrant.
  2. Cook Ground Beef: Add the ground beef to the pot. Cook it thoroughly, breaking it apart with a spoon until browned and no longer pink. Drain any excess fat from the meat.
  3. Add Spices: Stir in 2 teaspoons chili powder, 2 teaspoons dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook for 1-2 minutes to allow the spices to release their aroma and meld with the beef.
  4. Add Soups and Liquids: Pour in the 2 cans of condensed cream of tomato soup, the can of diced tomatoes with juice, 32 ounces of beef broth, and 4 cups of water. Stir the mixture well to combine all ingredients evenly.
  5. Simmer with Pasta: Bring the soup mixture to a boil. Once boiling, add the 2 cups of uncooked pasta. Reduce the heat to low, cover the pot, and let it simmer, stirring occasionally, until the pasta is tender but still slightly firm to the bite (al dente), about 10-12 minutes.
  6. Finish and Serve: Taste the soup and adjust seasoning if necessary. Serve the beef and tomato macaroni soup warm for a comforting meal.

Notes

  • Use any small pasta shape such as macaroni, elbow, or small shells for best results.
  • Drain excess grease after cooking beef to keep soup from being too oily.
  • Simmering pasta in the soup absorbs flavors but prevents overcooking by using al dente timing.
  • Adjust chili powder quantity depending on your preferred spice level.
  • For a richer flavor, substitute beef broth with homemade stock if available.
