- 2 cloves garlic, minced

- 4 cups beef broth
- 2 cups water
- 1 can (14.5 oz) diced tomatoes with juice
- 1 can (8 oz) tomato sauce
- 1 ½ cups elbow macaroni
- 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
Seasonings:
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and pepper to taste
Optional Garnish:
- Chopped fresh parsley
Instructions
- Brown the Beef: In a large pot over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain excess fat if needed.
- Sauté Onion and Garlic: Add chopped onion and garlic to the pot, sauté until softened, about 2-3 minutes.
- Add Broth and Tomatoes: Stir in beef broth, water, diced tomatoes, and tomato sauce. Bring to a simmer.
- Season and Simmer: Add Italian seasoning, paprika, salt, and pepper. Let it simmer for 10 minutes.
- Cook Pasta and Vegetables: Stir in macaroni and frozen vegetables. Cook for 10-12 minutes until pasta is tender.
- Adjust and Serve: Adjust seasoning, garnish with parsley if desired, and serve hot.
Notes
- You can substitute ground turkey or chicken for the beef.
- For extra flavor, add a bay leaf while simmering (remember to remove before serving).
