Ingredients
Scale
Chicken Filling
- 1/2 pound cooked, shredded chicken breast
- 1 cup barbecue sauce (Sweet Baby Ray’s recommended)
Dough and Toppings
- 1 can (8 ounces) refrigerated crescent rolls or crescent sheet (alternatively, 1/2 pound (8 ounces) pizza dough)
- 1 cup shredded colby-jack cheese
- 1/3 cup chopped fresh cilantro (optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375° F and grease a 9×13 inch baking pan with non-stick spray to prevent sticking and allow easy cleanup.
- Mix Chicken and Sauce: In a medium bowl, combine the cooked, shredded chicken with the barbecue sauce. Stir thoroughly to ensure the chicken is evenly coated with the sauce. Set this mixture aside.
- Roll Out Dough and Assemble: Unroll the crescent dough onto a sheet of wax or parchment paper. Roll it out gently to form a 12×15 inch rectangle. Spread the barbecue-coated chicken evenly over the dough, then sprinkle the shredded colby-jack cheese evenly on top. Starting from the long edge, roll the dough tightly like a cinnamon roll to encase the filling.
- Slice Roll into Pieces: Using a sharp knife, cut the rolled dough into 12 equal slices and place them cut side up in the prepared baking pan.
- Bake the Rollups: Bake the rollups, uncovered, for 22 to 25 minutes or until they are golden brown and the dough is fully cooked through. Once baked, remove from the oven and allow them to rest for 5 minutes to set.
- Serve: Garnish with chopped fresh cilantro if using, and serve warm for a delightful BBQ-flavored snack or meal.
Notes
- You can substitute crescent roll dough with pizza dough if you prefer a thicker crust.
- For extra flavor, add a pinch of smoked paprika or chili powder to the BBQ chicken mixture.
- These rollups can be made ahead and refrigerated; just bake when ready to serve.
- Serve with extra barbecue sauce or ranch dressing on the side for dipping.
- Fresh cilantro is optional but adds a nice fresh contrast to the rich flavors.
