Potatoes:

  • 2 lbs baby potatoes, halved

Seasoning:

Additional:

  • 6 oz block of feta cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Prepare potatoes: Place halved potatoes on a large baking dish or ovenproof skillet. Drizzle with olive oil, sprinkle with oregano, garlic powder, salt, and pepper. Toss until evenly coated.
  3. Add feta: Nestle the block of feta cheese in the center of the dish.
  4. Roast: Roast for 35–40 minutes, stirring the potatoes halfway through, until golden brown and tender.
  5. Combine: Once baked, gently break apart the feta with a spoon and toss with the hot potatoes to create a creamy sauce.
  6. Serve: Garnish with fresh parsley if desired and serve immediately.

Notes

  • For extra flavor, add cherry tomatoes to roast alongside the potatoes.
  • You can also use crumbled feta instead of a block—just add it during the last 10 minutes of baking to prevent over-browning.
