Description

This creamy baked feta pasta combines warm, roasted feta cheese and cherry tomatoes to create a rich, flavorful sauce tossed with your favorite pasta. A simple and delicious Mediterranean-inspired meal that comes together in just 35 minutes, perfect for a comforting weeknight dinner.

Ingredients

Scale

Feta and Tomato Mixture

  • 1 block feta cheese (approximately 7 ounces)
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Pasta

  • 8 oz pasta of choice
  • Fresh basil for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the feta and tomatoes.
  2. Prepare Baking Dish: Place the block of feta cheese in the center of a baking dish, then arrange the cherry tomatoes evenly around it.
  3. Add Seasonings: Drizzle the olive oil over the feta and tomatoes. Sprinkle minced garlic, dried oregano, salt, and black pepper evenly over the top.
  4. Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the feta is soft and lightly golden, and the cherry tomatoes have burst and softened.
  5. Cook Pasta: While the feta and tomatoes bake, bring a pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain well.
  6. Mix Sauce: Remove the baking dish from the oven. Using a spoon, stir the baked feta and tomatoes together until it forms a creamy, cohesive sauce.
  7. Toss and Garnish: Add the cooked pasta to the baking dish and toss thoroughly to coat the pasta with the feta sauce. Garnish with fresh basil leaves before serving.
