Scale
Feta and Tomato Mixture
- 1 block feta cheese (approximately 7 ounces)
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Pasta
- 8 oz pasta of choice
- Fresh basil for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the feta and tomatoes.
- Prepare Baking Dish: Place the block of feta cheese in the center of a baking dish, then arrange the cherry tomatoes evenly around it.
- Add Seasonings: Drizzle the olive oil over the feta and tomatoes. Sprinkle minced garlic, dried oregano, salt, and black pepper evenly over the top.
- Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the feta is soft and lightly golden, and the cherry tomatoes have burst and softened.
- Cook Pasta: While the feta and tomatoes bake, bring a pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain well.
- Mix Sauce: Remove the baking dish from the oven. Using a spoon, stir the baked feta and tomatoes together until it forms a creamy, cohesive sauce.
- Toss and Garnish: Add the cooked pasta to the baking dish and toss thoroughly to coat the pasta with the feta sauce. Garnish with fresh basil leaves before serving.
