Beans and Sausage

Instructions
- Prepare the Beans: Drain and rinse the soaked red beans thoroughly to remove any impurities.
- Cook the Sausage: In a large pot, heat vegetable oil over medium heat. Add the sliced smoked sausage and cook until browned. Remove the sausage from the pot and set aside.
- Sauté Vegetables: In the same pot, add diced onion, green bell pepper, celery, and minced garlic. Sauté until the vegetables are softened and fragrant, about 5 minutes.
- Simmer Beans: Add the rinsed red beans back into the pot along with chicken broth, dried thyme, paprika, cayenne pepper, black pepper, salt, and bay leaf. Bring the mixture to a boil.
- Reduce and Cook: After boiling, reduce the heat to low and simmer uncovered for 1 1/2 to 2 hours. Stir occasionally to prevent sticking, allowing the beans to soften and the liquid to thicken.
- Add Sausage Back: Return the browned sausage to the pot and cook for an additional 15 minutes to meld flavors.
- Finish the Beans: Remove the bay leaf. Lightly mash some of the beans using the back of a spoon to create a creamy texture, while leaving some whole for bite.
- Serve: Spoon the red beans over cooked white rice. Garnish with chopped parsley and sliced green onions for fresh flavor and color.
