Dry Ingredients:
- 1 cup oat flour
- 1/2 cup vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Wet Ingredients:
- 1 cup unsweetened applesauce
- 2 large eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Additional:
- 1 cup finely chopped apple (peeled)
- Optional: 1/4 cup chopped walnuts
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
- Mix dry ingredients: In a large bowl, combine oat flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet ingredients: In another bowl, mix applesauce, eggs, maple syrup, and vanilla extract.
- Combine wet and dry: Pour wet ingredients into dry ingredients and stir until just combined.
- Add apples and walnuts: Fold in chopped apples and walnuts if using.
- Bake: Divide batter into muffin cups and bake for 18–22 minutes.
- Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

- Store muffins in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- These muffins freeze well.
- Almond flour can be substituted for oat flour, but texture may vary.
