Ingredients
For the cookies:
2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1 teaspoon cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 1/4 teaspoon salt, 1/2 cup unsalted butter, softened, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 large egg, 1/2 cup reduced apple cider, 1/4 cup buttermilk, 1 teaspoon vanilla extract
For the filling:
4 ounces cream cheese, softened, 1/4 cup unsalted butter, softened, 1/4 cup caramel sauce (plus more for drizzling), 1 1/2 cups powdered sugar, pinch of salt
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy. Beat in the egg, then mix in the reduced apple cider, buttermilk, and vanilla extract.
- Gradually add the dry ingredients and mix until just combined.
- Drop rounded tablespoons of batter onto the prepared baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes, or until set and slightly springy to the touch.
- Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
- To make the filling, beat the cream cheese and butter together until smooth. Add the caramel sauce and a pinch of salt, then gradually beat in the powdered sugar until light and fluffy.
- Spread or pipe the filling onto the flat side of half of the cookies, then top with the remaining cookies to form sandwiches. Drizzle with additional caramel if desired. Chill for 15–20 minutes to set before serving.
Notes
- To make reduced apple cider, simmer 1 cup of apple cider in a saucepan over medium heat until reduced to 1/2 cup. This intensifies the apple flavor.
- Store assembled whoopie pies in the fridge, but let them sit at room temperature for 10 minutes before serving for the best texture.
