- Make the Cheese Filling: In a medium bowl, combine the room temperature cream cheese and shredded cheddar cheese until the mixture is smooth and well blended, creating a creamy, flavorful filling.
- Stuff the Jalapeños: Spoon the cheese mixture evenly into one half of each jalapeño, then press the other half on top to reform the jalapeño halves into whole pieces filled with cheese.
- Wrap with Sausage: Divide the pork sausage into six equal portions. Flatten each portion into a patty, then completely encase each stuffed jalapeño with the sausage, pinching the edges securely to seal the filling inside.
- Wrap with Bacon: Wrap each sausage-covered jalapeño with two slices of thick-cut bacon, securing the bacon with toothpicks to hold everything tightly together during cooking.
