Description

Curry Base:

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional)

Additional Ingredients:

  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk
  • 1/2 cup chicken broth
  • 1 medium sweet potato, peeled and diced
  • 1 red bell pepper, chopped
  • 1 cup spinach leaves
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  1. Brown the Chicken: Heat oil in a skillet, brown chicken on all sides, then set aside.
  2. Sauté Aromatics: Cook onion until soft, add garlic, ginger, and spices; cook until fragrant.
  3. Add Remaining Ingredients: Stir in tomatoes, coconut milk, and broth. Return chicken to the pan with vegetables.
  4. Simmer: Cover and cook until chicken is done and vegetables are tender.
  5. Finish: Stir in spinach, cook until wilted. Serve hot, garnished with cilantro.
