- 1 1/2 pounds boneless, skinless chicken thighs, cut into chunks

Curry Base:
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional)
Additional Ingredients:
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1/2 cup chicken broth
- 1 medium sweet potato, peeled and diced
- 1 red bell pepper, chopped
- 1 cup spinach leaves
- Chopped fresh cilantro, for garnish (optional)
Instructions
- Brown the Chicken: Heat oil in a skillet, brown chicken on all sides, then set aside.
- Sauté Aromatics: Cook onion until soft, add garlic, ginger, and spices; cook until fragrant.
- Add Remaining Ingredients: Stir in tomatoes, coconut milk, and broth. Return chicken to the pan with vegetables.
- Simmer: Cover and cook until chicken is done and vegetables are tender.
- Finish: Stir in spinach, cook until wilted. Serve hot, garnished with cilantro.
